Sweet Potato Apple Pie with Spelt Crust, Sugar Free Option Apples and sweet potatoes are two of my all time favorite foods and did you know they make a good marriage too? I discovered that cooked apples and roasted sweet potato blend together to make a pie thats way better than pumpkin and so much easier to make if you want everything from scratch. This pie has body, natural sweetness and when baked in a whole grain spelt pie crust, its amazingly good. Spelt is an ancient grain thats got a lower glycemic count than regular wheat, is easier to digest and edible for many people who are gluten sensitive. I like it because it tastes good. Its nutty. I love pie and so do the people in my life, but we are all very mindful of our health and what we are eating. If Im not eating paleo (no grain at all), I like to find ways to cut sugar and eat as minimally processed as possible. You could make this pie with my regular pie dough recipe, but if youre here looking for some new ways to make old desserts, give the spelt flour a try. Ive been baking with spelt flour for some time, so Im used to it and how it performs. It absorbs more liquid than all purpose flourand I wanted to make sure the crust didnt get too tough. I replaced 1/4 of the butter with cream cheese, and the result is perfect. I throw that word perfect around a lot when it comes to pie crust, because its something I can make blindfolded. The good news here is that spelt dough is just as easy to work with and while it has a darker color which might be off putting, that color is what wheat should look like, so just know youre eating food with more nutritional benefits. 3/4 cup frozen light whipped dessert topping, thawed (optional) Preheat oven to 375 degrees F. Prepare Oil Pastry. On a well-floured surface, use your hands to slightly flatten dough. Roll dough from center to edge into a circle about 12 inches in diameter. To transfer pastry, wrap it around the rolling pin. Unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim pastry to 1/2 inch beyond edge of the pie plate. Fold under extra pastry. Flute or crimp edge as desired. Do not prick. For filling: In a large bowl, combine mashed sweet potatoes, evaporated milk, eggs, sugar, cinnamon, vanilla, butter flavoring, the 1/4 teaspoon nutmeg, and the lemon extract; whisk until nearly smooth. Ingredients 6 packets sugar substitute ¼ cup brown sugar ½ teaspoon salt ¼ teaspoon nutmeg 3 large eggs ¼ cup evaporated skim milk 1 teaspoon vanilla 3 cups cooked, mashed sweet potatoes Directions Preheat oven to 350º. Patti Labelle-style Sweet Potato Pie
I purchased a sweet potato pie today from Walmart's. It is the worst pie I have tasted in a long time. It had too much flour and made the potatoes too light,no real sweet potato taste. I have had much better tasting pies than this and will not purchase one again. I followed this recipe, reducing the cinnamon to 1/2 tsp. After 30 mins I topped the pie with a mix of chopped pecans and brown sugar. Got rave reviews from everyone. Will be making this again next time... I used this recipe last year (and using a modified version this year). I like it for the most part. This year I will not be adding the brown sugar to the bottom of the crust; it cause my pie to stick to the bottom of the pan. And as another person mentioned, I roast my sweet potatoes rather than boil them (Mom's voice), they hold less water that way. Poorly written recipe. For example, they tell you to divide already melted butter. it's possible but not easy. There's just not enough liquid in the filling. The sweet potato pie in this site calls for 3 eggs and 3/4 cup milk. This one calls for 2 eggs and 1/4 cup milk. The consistency of the filling is mashed potatoes. The crust shrunk and bubbled up after the first bake. The directions should have been to dock and brush with melted butter AND THEN refrigerate, NOT refrigerate and then brush with the melted butter. I should have known the melted butter will heat up my carefully chilled crust. Did Epicurious test this recipe? How disappointing! Good recipe. Sweet Potato Pie | Sweet'n Low
1 1/2 pounds sweet potatoes, jewel or garnet yams 3 packets Sweet'N Low zero calorie sweetener Place the sweet potatoes on a baking sheet and roast until they are very soft when squeezed, 50 to 75 minutes, depending on their size. When they are cool enough to handle, peel the sweet potatoes and measure 2 cups. Set the remaining sweet potatoes aside for another use. Place the sweet potato flesh in the bowl of a food processor, and whirl to a smooth puree. Add the egg, molasses, cinnamon, allspice, ginger, and Sweet'N Low zero calorie sweetener, and whirl to combine. Add the milk and whirl until the filling is blended. Set the pie crust on a baking sheet and add the filling, smoothing the top even. Bake the pie at 400 F for 15 minutes. Reduce the oven temperature to 350 F and bake for 50 minutes, or until a knife inserted into the center of the pie comes out clean. Cool the pie on a wire rack.
