You don’t have to be a diabetic to enjoy these, my kids can vouch for that. However, if you need it, the nutritional information is available at the end. I found this recipe in a magazine called Diabetic Living run by Better Homes and Gardens. This whole diabetic thing is still very new to me, but I am determined to stay healthy, lose weight (lost 7.5 pounds so far!), and keep my diabetes in check. I knew that one thing that I would have trouble with giving up was sweets. Turns out I don’t actually have to give up anything, I just need to watch my portions and keep track of my carbs, proteins and fats. This is why the nutritional information, especially the diabetic counts, are so important on recipes. I was immediately drawn to the photo in the magazine and knew I had to try it. I did search out the magazine online and found the recipe here. This can also be made as a layer cake by using two 8 or 9 inch round pans. I was a little skeptical about how it would taste. Carrot cake can be good or really, really bad, and this recipe had flax seed meal. I’ve never used that before and it sounds so darn healthy, which of course is often associated with poor flavor. Nothing could be further from the truth. The cake is delicious and the cream cheese frosting is divine. These would be perfect for a party, however I think if I made these again, I would make them into triangles or squares and avoid the scrap cake all together. Originally I created this cake for a lady in our church who had just come out of surgery. I was happy to do it, but also a bit nervous because she’s diabetic. After a bit of digging through some old cookbooks, I decided to make this Sugar-Free Pineapple Lush Cake. Only one other time have I baked a sugar-free cake and it wasn’t all that impressive, so this time I wanted to try something different. After I first published this recipe, I had several complaints about it not being actually “sugar-free” since pineapple has sugar. That is true. I supposed I should’ve noted that there’s no added or processed sugar – only the sugar naturally occurring in the pineapple, which is acceptable for most diabetics in moderation. Ingredients Directions Preheat oven to 325°F. Combine the graham cracker crumbs and margarine. Pat evenly over the bottom and about 1/2 inch up the sides of a 9 1/2-inch springform pan. Bake in oven for 7 minutes. Meanwhile, using an electric mixer on high speed, beat the 4 egg whites and cream of tartar in a large bowl until foamy. Gradually add 6 tablespoons of the sugar substitute, 1 tablespoon at a time, beating until egg whites form stiff peaks. In another large bowl, stir the remaining sugar substitute with the cornstarch, then add the egg yolks, cream cheese, lemon zest, and vanilla. Beat (using the unwashed beaters) until well blended. Fold beaten egg whites into cheese mixture. Spoon the mixture into the partially-baked crust. Bake in the oven until center barely jiggles when cheesecake is gently shaken, 45 to 50 minutes. Remove from oven and cool completely. While the cheesecake is cooking, melt the raspberry preserves in a small pan over medium heat, stirring often. Cool, stirring occasionally, until the preserves form a thick syrup (that should take about 5 minutes). Remove the outside of the springform pan. Mound fresh raspberries on the cheesecake and drizzle with preserve syrup. Chill. When ready to serve, cut the cheesecake into wedges. Although not a low-calorie dessert, this Deliciously Diabetic German Chocolate Cake is a very tasty sugar-free option for those who need to be watch their sugar intake. Last week we celebrated my dad’s 74th birthday! We asked him what he’d likfor his birthday and he requested 2 things…. Lunch at Cracker Barrel German Chocolate Cake Just a couple of months ago my oldest daughter made a homemade German Chocolate Cake for her (then) fiance’s birthday. My dad, who has a serious sweet tooth, tried a bite and LOVED it! So, that’s where he got the idea to request one for his birthday. Only one problem…. my dad is diabetic and our usual German Chocolate Cake has enough sugar to send him into a diabetic coma before he could finish the first piece! So, I went on a quest for a Sugar Free cake and found this one over at Sass & Pepper. I made a couple of changes but used her basic recipe. I will admit, I don’t really cook sugar-free and many of the sugar-free desserts I’ve had aren’t very good. So honestly, I wasn’t very hopeful, but I decided to give it a shot. The cake is a little time consuming, but then again, pretty much any made-from-scratch cake is. We like our German Chocolate Cake with chocolate frosting on the outside and the coconut-pecan frosting on top and between the layer. I used canned (Pillsbury) sugar-free chocolate frosting. I found a few sugar-free recipes but couldn’t find sugar-free chocolate chips at any of my local stores. Next time, I will order them online and give it a shot. The cake’s texture is more dense than regular cake and the layers thinner.
