In a large saute pan with straight sides over medium-high heat, heat the olive oil. Add the red and green bell pepper, onion and then season with salt and a few grinds of black pepper. Saute until the vegetables are tender then add the garlic, cumin, coriander, cayenne pepper, and sazon seasoning. Cook for a minute or so then add the ground chicken and cook, breaking up the chicken with a wooden spoon while stirring. Make sure to really break up the ground chicken on this step so there are no large clumps. Once the chicken is cooked through, sprinkle the flour over the top and stir while cooking to allow the flour to blend into the chicken for a few minutes. Add the chicken stock then raise the heat to a simmer and cook until the stock thickens a bit, about 4 to 5 minutes. Serve in warm taco shells topped with shredded lettuce and a dollop of Creamy Salsa. Combine the tomatoes, cilantro, red onion, jalapeno, scallion, sour cream hot sauce, garlic powder, and lime juice in a medium bowl. This Recipe Serves 4 Ingredients 1 1/2 Tbsp olive oil 1 cloves garlic, minced 24 oz fresh baby spinach 1 large (8-oz) sweet potato, peeled and diced 1/4 tsp cumin 1/4 tsp ground black pepper 4 Tbsp water 1 cup cooked chicken, shredded 4 (6-inch) corn tortillas, heated 4 tsp light sour cream 1/2 cup pico de gallo (purchased) Instructions In a large nonstick pan, heat the oil over medium heat. Add the garlic and sauté for 30 seconds. Add the spinach and sauté for 3 to 4 minutes. Add the sweet potato, cumin, black pepper, and water to the pan. Sauté for 2 minutes. Cover, reduce the heat to low, and cook for 8 minutes. Add the chicken to the pan and mix to incorporate. Heat for 2 minutes. Fill each tortilla with 1/4 of the chicken and sweet potato mixture. See all of the suggestions below. Optional: avocado, hot sauce, cilantro, and green onions for serving Spray a large casserole dish with oil. In the dish, mix together chicken, quinoa, black beans, yellow squash, mushrooms, chiles, salsa, spices, salt, and pepper. Pour broth over the top, which helps move the quinoa to the bottom to cook through. Top with frozen peppers and onions. Cover and place in the oven for 30 minutes.
