HisDad was recently diagnosed withType 2 diabetes, but, being in his nineties, hes finding it a little hard to adapt to his new eating regime. In particular, after 93 years of eating cake, biscuits, sweets, chocolates etc., hes developed something of a fondness for them. And hasnt taken kindly to the idea of giving them up. So, as a birthday treat, DH wanted me to create a birthday cake that his diabetic Dad would be able to eat a large helping of and even have seconds! without any worries at all. A sugar-free, low-carb birthday cake. How hard could it be?! I have a huge bag of coconut flour, so decided to use that instead of wheat flour as it is significantly lower in carbohydrate, not least because you only need to use a fraction of the amount. But cake needs sugar, right? Or at least sweetener. I considered my alternatives Fructose (aka fruit sugar) is easier for some diabetics to metabolise, but is still a carbohydrate and most importantly, doesnt work well in baking. Xylitol, which Ive used in limited amounts before, is not metabolised, so doesnt count as a dietary carbohydrate. Its OK, but can cause tummy upsets in large quantities not what you want from a birthday cake, really. Stevia, which comes in various formulations, but is much sweeter than sugar so cant be substituted into a recipe easily. Erythritol, which is a sugar-alcohol like xylitol, and also is notmetabolised, so counts as zero dietary carbs. It doesnt have the side-effects of other similar products, and can be substituted 1:1 for sugar. Bingo! I wanted to make a sugar free cake for my daughters birthday. So I had a search online. Seems simple enough. Except, do you have any idea how hard it is to find agenuinely sugar free birthday cake recipe for young children? Seriously, Google it. Itll come up with hundreds of seemingly perfect options. And then you read the ingredients. Honey. Maple Syrup. Dates. Dried fruit. Fruit juice. I get that these are more appealing to give to children than caster sugar. They seem innocent enough. And for a celebration? Why not? Justdont call them sugar free!! These ingredients areall forms of sugar! I was getting really fed up of finding nothing. I was not entirely unhappywith the thought of giving my daughter a slightlysugary cake for her birthday. After all, its a celebration! But I dont see why a celebrationhas to include sugar . I dont understand why I will be judged asdepriving my child if I do not serve her sugar-laden treats and drinks on those days. So I wanted to do my best to try and find a totally sugar free cake before resorting to sugar. After all, my daughter is used to less-than-sweet treats, so why not give her something that she will truly enjoy without it being sugar-laden? As I was getting ready to give up, I came across a recipe for a totally sugar and sweetener free banana cake that looked good and had some great comments.
