Diabetes is a condition in which there is high sugar (glucose) level in the blood. The glucose comes from the food we eat. A hormone insulin produced by the pancreas is responsible for absorbing the glucose into our body cells. Diabetes can be caused by the pancreas not producing enough insulin (Type I) or due to insulin resistance (Type II) i.e. the body cells do not respond to the insulin produced.Diabetes causes frequent urination and increased hunger. A diabetic diet must include food with low glycemic index (GI). GI is an indication of how much the blood sugar level will rise when we eat something. Foods with low GI include fruits, vegetables,beans, oats and other whole grains. These are food which are high in vitamins and fiber content. If you have diabetes, try to restrict your diet to 1500-1800 calories in a day. Moderation is the key - eat everything in moderate quantities. Try to include lots of vegetables into your meal in order to increase the fiber content. For eg. : Try to use whole grain noodles or pastas, use brown rice to make all variety rice dishes and try to include lots of millets in your diet. In addition, try to include as many vegetables or sprouts as possible in the dish to increase the fiber content. Fruits are high in fiber too. This is why too much glucose builds in the bloodstream. There are two major types of diabetes: 1. Type 1 This is popularly known as Juvenile Onset Diabetes. Here, the body produces little or no insulin. It occurs most often in childhood or in the teens and could be inherited. People with this type of diabetes need daily injections of insulin. They must balance their daily intake of food and activites carefully with their insulin shots to stay alive. 2. Type 2 Also known as Adult Onset Diabetes, this occurs around 35 to 40 years. The more common of the two types, it accounts for about 80 per cent of the diabetics. Here, though the pancreas produce adequate insulin, body cells show reduced sensitivity towards it. 2-3 green chillies ( according to taste can be avoided if you dont like hot preparations) 1 small kaccha Aam (green mango- aambi; easily available these dauys) Chop into small pieces after removing the skin 1 tbsp mustard oil or any other Healthy oil Wash Karelas thoroughly, remove the end portions, Cut lengthwise and remove seeds and slice into small pieces Heat 11/2 glass of water add tspn of salt and put the karela slices in the hot water, leave to simmer after covering with a lid for few minutes, when only partially cooked , strain the hot water and wash Karela in cold running water. In a Karahi or frying Pan heat oil, add jeera ( cumin seeds ) to hot oil whens seeds are ready add the Karela pieces , salt & Haldi powder; mix well on medium heat till karela pieces are crisp.
