Old-fashioned Beef Stew
Choices: Starch 0.5, Vegetable 1, Lean meat 2, Fat 0.5 portobello mushrooms, cleaned, stemmed, and cut into 1/2 inch pieces carrots, peeled and thickly sliced on the diagonal frozen pearl onions, thawed and patted dry red potatoes, unpeeled, washed, and cut into 1 inch cubes kosher salt and freshly ground black pepper to taste Add the flour to a large bowl. Pat the beef very well with paper towels. Add in the beef and toss gently. Shake off any excess flour. Heat 2 Tbsp. of the oil in a large dutch oven. Add the beef, in batches, and cook until browned on all sides, about 5 to 7 minutes. Remove the beef with a slotted spoon and set aside. Add the remaining 1 Tbsp. of oil to the pot, and add in the portobello mushrooms. Saut the mushrooms for about 5 to 6 minutes until browned. Remove the mushrooms with a slotted spoon, and set aside on a plate. Add in the carrots, pearl onions, and red potatoes, and saut for 5 to 6 minutes. Add in the garlic, and saut for 3 minutes. Remove the vegetables with a slotted spoon to a bowl and set aside. Add the beef back to the pot. Add in the beer, and simmer over medium heat for about 8 minutes. Add in the beef broth, and bring to a boil. Reduce the heat to low, cover, and simmer for about 1 hour, or until the beef is very tender. Add in the carrots, onions, and potatoes, cover, and simmer for another 45 minutes to 1 hour, until the vegetables are soft. Add in the mushrooms, thyme, and rosemary, and simmer uncovered for 5 to 7 minutes. Some of the liquid will evaporate, thickening the stew. Season with salt and pepper. Garnish with parsley. Roast Beef With Creamy Horseradish Sauce
Lean meats like this roast beef can make a great holiday entre that the whole family will love. Prep Time: 10 minutes Cook Time: 1 hour, 10 minutes + resting time Serving Size: 3 ounces meat + 3 tablespoons sauce 1 (3-pound) sirloin tip roast or bottom round roast, all excess fat removed (leave at room temperature for 15 minutes before roasting) cup peeled, grated fresh horseradish or prepared horseradish Preheat the oven to 400 degrees F. Combine the black pepper, salt, and garlic, and rub all over the roast. Place the meat in a large roasting pan. Roast the meat for about 20 minutes. Reduce the heat to 325 degrees F, and bake for about 50 additional minutes or until a meat thermometer inserted in the roast registers 140 degrees F for medium rare. Cook longer if desired. Remove the roast from the oven. Cover loosely with foil, and let stand for 15-20 minutes. Cut the meat across the grain into thin slices. Combine the ingredients for the horseradish sauce, and serve with the sliced beef. Diabetic Beef Stew
Peel and chop the onions coarsely. Chop the celery coarsely as well. Peel and mince the garlic. Saute the onions and celery until softened in the oil; remove them to a large stew pot. Add the beef or lamb to the frying pan and cook until browned, stir in the garlic; then add the meat to the onions and celery. Add the water or broth, the barley and the bay leaves to the stew pot. Peel and chop all the remaining vegetables into bite-sized pieces. Add them to the stew in the order given, then add the tomatoes and the spices. Cheesy Beef Taco Skillet Recipe
Enjoy this cheesy beef taco skillet recipe which doesn’t require any high carb tortillas. It’s an easy one pan low carb dish that cooks up quickly. Do you love Mexican flavors? I sure do. We used to have a lot of taco nights, but I haven’t done one in a while. That needs to change, especially after I’ve made my own low carb tortillas. It really wasn’t difficult to adapt the recipe into a low carb version. I just replaced the rice and corn as well as leave out a couple other carb adding ingredients. The original recipe used a jar of roasted red peppers which I left out. And, I didn’t use the taco seasoning mix because it has added starch. Instead, I used the seasoning blend from my Mexican Zucchini and Beef recipe. The original recipe calls for two cans of diced tomatoes. I used this amount at first. But, after calculating the effective carbs per serving, I decided to cut the amount in half. Although tomatoes are low carb, they are a fruit and contain sugar carbs that can add up. So, there’s only one can of diced tomatoes with green chilis in this low carb cheesy beef taco skillet recipe. With Cinco de Mayo just around the corner, I’m thinking this easy skillet dish will be perfect for celebrating. I may even make some tacos and throw a low carb party. For this cheesy beef taco skillet recipe, you can use any style of cheese you like. I used an 8 ounce block of Colby Jack cheese that I shredded in the food processor. You can make your own Mexican cheese blend by combining Monterey Jack and mild Cheddar. Just be careful of the pre-shredded cheese blends. They often add unnecessary starch. Healthy & Easy Beef Fajitas You Can Make in 15 Minutes Summer calls for colorful dinners made in no time at all and these healthy and easy Beef Fajitas are perfect for that. You can have them ready in less than 20 minutes from the time you decide to start cooking! I have to give you a few great tips on how to stir-fry beef strips because there is a little bit of an art to making sure they stay nice and juicy. The number one mistake most people make is adding all the strips to the pan at once while they are still cold from the fridge. That will lower the temperature in the pan and make the strips boil instead of fry. Instead of doing that, take the strips out of the fridge 30 min before frying so they can get to room temperature and fry them in several batches if you are making a lot. You also want the pan to be SMOKING hot. Wait at least a few minutes for the pan and oil to properly heat up. Another great reason to cook the strips in batches is that they get a more even frying if they dont touch each other in the pan. It only takes about 3 minutes to cook each batch so the overall time doesnt get much longer by splitting the strips into batches. In my opinion, bell peppers are the perfect veggie for stir-frying. They are a little bit sweet while still being savory, and they keep their firm consistency when heated. Combined with onion, they form the basis of a lot of my stir-fry recipes. This low carb Mexican zucchini and ground beef recipe is a simple dish made with low cost ingredients. It’s an easy low carb high fat dinner recipe perfect for summer. We had a really good zucchini crop this year. The last few years, our plants ended up getting powdery mildew so they didn’t produce but one or two fruit. However, I think some of the issue was due to us overwatering the plants in the evening. This year, there was a lot of rainy days so we didn’t bothering adding any additional water and the plants did amazing. Chopped zucchini pairs well with ground beef. I came up with this Mexican Zucchini and beef skillet dish recipe one night for an easy dinner. I’ve made a similar dish in the past using leftover salsa. This time, I just added a whole can of diced tomatoes with green chilis. I added a few Mexican spices to give it a little more flavor to make up for the salsa seasonings. If you can’t find canned tomatoes with chilis, a can of regular diced tomatoes will do. You can even add a few diced peppers if you have some. I typically just taste as I go and look around to see what ingredients I have on hand that would be great additions. My cooking is super simple as I don’t have a lot of time to fuss. I like to slice up fresh zucchini into bite size pieces. My favorite cut is to cut each slice into quarters. You can cut them into smaller diced pieces, if you prefer. Diabetic-friendly Slow Cooker Beef Stew With Red Wine Gravy
Directions 1. Trim excess fat from beef; cut into 1-inch cubes. In a large self-sealing plastic bag combine flour, Italian seasoning, salt and pepper. Add meat to bag. Seal and toss to coat meat with flour mixture. In a 12-inch skillet, brown meat, 1/2 at a time in hot olive oil (adding more oil if necessary). 2. Meanwhile, in a 4-1/2- to 6-qt. slow cooker place onions, parsnips, carrots and Jerusalem artichokes. Top with browned meat. Combine wine and beef broth; pour atop meat. 3. Cover; cook on low-heat setting for 12 to 14 hours or on high-heat setting for 6 to 7 hours. Stir in tomato paste. Pass tomatoes, raisins, and/or vinegar to sprinkle on each serving.
