1 / 9 Back in January, celebrity chef Paula Deen went public with her type 2 diabetes diagnosis around the same time an endorsement deal was announced between Deen and the company that makes the diabetes drug Victoza. Since then, the public has been in an uproar over her full-fat, high-sugar recipes and how they may have contributed to her developing the condition, and it's easy to see why. "If you were to regularly eat the foods that Paula Deen traditionally cooks on her show, it certainly would increase the risk for developing type 2 diabetes," says Megan Fendt, nutritionist and certified diabetes educator at the Friedman Diabetes Institute at Beth Israel Medical Center in New York City. "These types of foods are high in calories, and any calories over and above what our bodies need are stored as fat. And there is a strong link between carrying excess weight and developing diabetes." When she made her announcement on the Today Show, Deen told co-host Al Roker, "I share with you all these yummy, fattening recipes, but I tell people, 'in moderation.' However, it's hard to figure out what constitutes a moderate portion of some of her more famous creations — like battered, deep-fried butter balls and a bacon-and-egg burger served on a glazed donut. Diabetes is a chronic disease that has reached epidemic proportions. It currently affects over 400 million people worldwide (1). Although diabetes is a complicated disease, maintaining good blood sugar control can greatly reduce the risk of complications (2, 3). One of the ways to achieve better blood sugar levels is to follow a low-carb diet. This article provides a detailed overview of low-carb diets for managing diabetes. What is Diabetes, and What Role Does Food Play? If you have diabetes, your body cannot process carbohydrates effectively. Normally, when you eat carbs, they are broken down into small units of glucose, which end up as blood sugar. When blood sugar levels go up, the pancreas responds by producing the hormone insulin. This hormone allows the blood sugar to enter cells. In healthy people, blood sugar levels remain within a narrow range throughout the day. In diabetes, however, this system doesn’t work the way it is supposed to. This is a big problem, because having both too high and too low blood sugar levels can cause severe harm. There are several types of diabetes, but the two most common ones are type 1 and type 2 diabetes. Both of these conditions can be diagnosed at any age. In type 1 diabetes, an autoimmune process destroys the insulin-producing beta cells in the pancreas. Diabetics must inject insulin several times a day to ensure that glucose gets into the cells and stays at a healthy level in the bloodstream (4). In type 2 diabetes, the beta cells at first produce enough insulin, but the body’s cells are resistant to its action, so blood sugar remains high. I don’t often do diabetes posts, but I do have diabetes and it is a grueling disease to manage. As if poking your finger a million times is fun, right? One thing about diabetes, though, is there are a lot of freebies out there for diabetics to take advantage of. I am not an expert on freebies, but I did do some research on some free stuff that you might want if you are a diabetic as of May 2017. I will try to keep this list updated as I find new offers. I have been on a diabetic diet many times just to lose weight and then as a need when I had gestational diabetes. You don’t have to have diabetes to use these diabetic menus and recipes. They are also excellent menus to use for eating healthier or for sensibly losing weight. There isn’t anything magical about a diabetic diet. The most important thing to remember in a diabetic diet is DON’T EAT SO MUCH!! You might be thinking, “but it’s not that easy!” Well, after taking a diabetic eating class, reading tons and tons of information on it and practicing it myself I can tell you, “YES IT IS!!” You just have to stop making excuses and do it! I am including myself in that, too, because I still have 30 pounds to lose or I run the risk of developing diabetes in the next year or so, so maybe I can motivate myself to do it, too. Here are some general guidelines about eating with diabetes: Cut your portions. Fill your plate, eat it and then don’t re-fill it. One half of the plate should be vegetables and fruit. Then one quarter should be grains and one quarter meat. Drink all the sugar free coffee and tea you want, but don’t forget to drink water. Use low-fat, low-calorie salad dressings, mayonnaise, margarines, jams and jellies. You can still have the flavor, but without so many calories. I personally don’t like the taste of anything “diet”, so I just eat half the normal serving amount. Avoid a lot of high fat foods or fried foods. Really, that’s about it. Personally, I think they should have included such coding in the other chapters because many other recipes are also vegetarian. Furthermore, they could have added coding for those recipes that are GF (gluten free). Nevertheless, the recipes are delicious sounding.
