Appetizer , Dinner , Lunch , Seafood Mexican Shrimp is higher in cholesterol than most meat and poultry, but it's lower in saturated fat. This tasty recipe from the Mayo Clinic is a delicious treat for your next meal! 3/4 pound uncooked shrimp, peeled and deveined (about 48 shrimp) 1Rinse shrimp in cold water. Pat dry with a paper towel and set aside on a plate. 2To make the marinade, whisk together the tomato paste, water and oil in a small bowl. Add garlic, chili powder and oregano. Mix well. 3Using a brush, spread the marinade (it will be thick) on both sides of the shrimp. Place in the refrigerator. 4Prepare a hot fire in a charcoal grill or heat a gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat source. 5Put the shrimp in a grill basket or on skewers and place on the grill. Who says that having diabetes means you can’t still whip up delicious, homemade food? When you know the basics of meal planning, you can make almost any recipe work. So don’t throw out your cookbooks or toss your favorite recipes. Instead, take some tips about how to cook wisely. 1. Cook with liquid fats in place of solid fats. Solid fats often include saturated fats, which you should limit, or trans fats, which you should avoid totally. If a recipe calls for solid fat like butter, lard, or hydrogenated shortening, try trans-fat free margarine, spreads, or shortening instead. Check the label to see whether the product will work for cooking or baking. Many liquid fats -- oils such as canola, corn, olive, and grape seed -- can be healthy when used in moderate amounts. Some oils have stronger flavors that may affect the taste. So experiment to find which oils work best with which recipes. 2. Switch to low-fat dairy. Many dairy products used in cooking and baking are high in fat. You can lower the fat content without compromising taste. Instead of whole milk or half-and-half, pour 1% or skim milk, condensed skim milk, or nonfat half-and-half. Instead of sour cream, try low-fat or nonfat plain yogurt, buttermilk, or even low-fat cottage cheese (you may need to blend it first to make it smooth.) To make a sauce that calls for cream or whole milk, use cornstarch and skim milk. 3. Use less fat altogether. For many dishes, you can use 25% to 33% less fat than what the recipe says. Another tip: Substitute applesauce or mashed bananas for some or all of the fat in baked goods. *CGM-based treatment requires fingersticks for calibration, if patient is taking acetaminophen, or if symptoms/expectations do not match CGM readings, and if not performed, may result in hypoglycemia. These delectable muffins have just 150 calories and a teaspoon of added sugar each making them a perfect breakfast treat (for everyone!). I love warm blueberry muffins, but not the excess calories or sugar they usually bring. So when I came across a blueberry muffin recipe that promised to deliver great taste and make my belly flat I figured, count me in! Unfortunately, after looking at the recipe more closely, eachmuffincontained 435 no-so-slim calories (and 10 teaspoons of sugar!), making them more of a give you a muffin-top muffin than one that would make your belly flat! You will not find that with this recipe. With a slim 150 calories and just a teaspoon of added sugar each, these sweet, tender, blueberry muffins are a true delight. And yes, when eaten in conjunction of an overall reduced-calorie diet, can help flatten your belly! 3 tablespoons margarine or butter, melted 1. Preheat the oven to 400F. Lightly spray 12 muffin cups with nonstick baking spray (Paper or foil liners may be added before spraying. Spraying the inside of paper liners with baking spray will keep the muffins from sticking to the paper.) 2. In a medium bowl, whisk together the first five ingredients (yogurt through vanilla extract). Set aside. 3. In a large bowl, stir together the next five ingredients (flour through baking soda). Add blueberries and stir lightly to coat with flour. Make a well in center of the dry ingredients and pour in the yogurt mixture. Using a large spoon or spatula, stir just until the dry ingredients are moistened.Spoon the batter evenly into prepared muffin tins, filling each cup 2/3 full. 4.
