Diabetic Lemon Chicken Recipe

Preparation time: 5 minutes. Cooking time: 30 minutes. 1 pound boneless, skinless chicken breast (4 pieces) Preheat oven to 375F. Tear off a piece of aluminum foil thats large enough wrap up all four pieces of chicken. Spray the aluminum foil with nonstick cooking spray (on one side only), and lay the chicken breasts on the sprayed foil. Drizzle with olive oil. Grate 1 tablespoon of lemon zest and set aside. Juice the lemon, removing the seeds. Pour lemon juice over chicken, then sprinkle chicken with lemon zest, onion powder, white pepper, and oregano. Fold the aluminum foil over the chicken and roll the edges of the foil together to make a sealed packet. Place packet on a jelly roll pan or in a large, shallow casserole dish. Bake 30 minutes. Remove from oven and carefully open foil, using tongs to remove chicken to serving plate. Yield: 4 servings. Serving size: One 4-ounce breast. Portion control is also important, which is where the "diabetic plate" comes in. Endorsed by several organizations, including the American Diabetes Association, the "diabetic plate" can be very helpful when planning dinners. Follow these simple steps: Draw an imaginary line down the center of your plate. Divide one half into two further sections, so that your plate is now divided into three. Ive always been a believer that you need to pluck the stems off themushrooms right away! They are tough and hearty and I didnt see much use for them. Then as I was cooking the other night, this urge to not waste food even-the-lonely-mushroom-stems came over me. It was very bizarre, but I learned a new thing about mushrooms. PS Im a mushroom lover, if you didnt know already. They do make me super happy that I try to eat all the mushrooms, even if they are on someone elses plate. Not the slimy gross raw mushrooms. I just cant get into those, but the slow cooked, grilled, or roasted garlicky mushrooms smothered in onions please. Well I learned while cooking mushrooms for my Shepherds Pie that mushrooms stems are the meaty part. They really stand well in place of meat and they give a really full flavor to a dish. WOW. Shepherds pie is a classic in the LaRue household. Not ourhouse, butthe house that my husband grew up in. They love their meat and potatoes and cheese, Shepherds Pie cannot be made without the cheese. This is news to me. As much as I love cheese, I dont think this Shepherds Pie needs cheese but what the heck, Im practically making this dish for him anyways so guess what Iaddedthe cheese.
