Preheat the oven to 325 degrees. Mix the flour with the cinnamon. Cream the butter and both the sugars until fluffy. Add the egg, milk, and vanilla. Gradually add the flour mixture. Stir in oats and raisins. Drop by teaspoonfuls if small cookies are desired, tablespoons if larger cookies are desired onto parchment paper (this stuff is reusable - one sheet will do the whole batch). Ingredients 1¼ cups rolled oats ¾ cup all-purpose flour ½ teaspoon cinnamon ½ teaspoon ginger ¼ teaspoon salt (optional) ½ teaspoon baking powder ½ cup reduced-fat margarine 1/3 cup dark brown sugar, packed ½ cup Splenda 1 egg 1 teaspoon vanilla extract 1/3 cup chopped raisins Cooking spray Directions Preheat oven to 350º. Stir together oats, flour, cinnamon, ginger, salt and baking powder. In another bowl, cream the margarine, brown sugar and Splenda with electric mixer. Beat in egg and vanilla. Great. I often cook the diabetes foods at home. In June of 2015, it was discovered that I had type 2 diabetes. By the end of the month, I was given a prescription for Metformin. I stated the ADA diet and followed it completely for several weeks but was unable to get my blood sugar below 140. With no results to how for my hard work, I panicked and called my doctor. His response? Deal with it. I began to feel that something wasnt right and do my own research. Then I found Rachels blog . I read it from cover to cover and I started the diet and by the next morning, my blood sugar was 100. Since then, I have a fasting reading between the mid 70s and 80s. Here are some cookie recipes for you to try. I was diagnosed with type 2 diabetes when I was sixty. I experiment with sugar-free recipes all the time. My 4-year-old granddaughter loves to help me in the kitchen. I find that she loves eating the sugar-free cookies the same as the sugar ones. If you start the kiddos out on less sugar while they are young, you are doing them a big favor and they wont even realize they are eating healthier. The Sugarless Bananan-Oatmeal Cookies are good to start with. The bananas add moisture (a problem in sugar-free baking) and natural sweetness. No Sugar Added Oatmeal-Raisin Cookies are also a good cookie as the oatmeal adds some moisture and the raisins add natural sweetness. My kids dont even like to eat raisins at all but ate these babies up! Because they are made with less butter and subbing in some coconut oil, the texture is not chewy, more crisp on the outside and soft on the inside. If you have an allergy to coconut oil then just replace the amount used, with butter. Obviously the nutrition info will not be same but do what works for you and your family. If you dont have powdered stevia or prefer not to use it, simply sub in 1/2 cup of honey or other sweetener of choice. 2-Ingredient Oatmeal Cookies {gluten-free, refined sugar-free, vegan} You know those black-spotted bananas on your countertop? Theyre ready for a love match. With oats. Mix these two together and in a matter of minutes, you have cookies. Staggeringly simple, scrumptious cookies. Cookies that are sugar-free, frugal, vegan, and gluten-free. You can eat them for breakfast, dessert, as a snack, to fuel up before a workout, to refuel after a workout, or even for dinner on one of those days when you need cookies for dinner; you will feel virtuous, satisfied and happy no matter the occasion. If youre feeling like a fancy-pants, you can add a splash of vanilla, a pinch of salt and some ground cinnamon. But honestly, they are great without embellishment, too. When your bananas reach that uber-ripe stage, no need to make cookies immediately (although you certainly can). Simply peel and freeze for future batches. Let the frozen bananas thaw at room temperature, or, if you share my level of impatience, shove into the microwave for 15 to 20 seconds until defrosted and mushy. Be sure to let the oats and bananas sit for about 5 minutes after combining. The oats become softer, resulting in extra-tender cookies. If you have some dribs and drabs of ingredientsdried fruits, seeds, nuts, sprinkles, etc.in the cupboard, feel free to add them to the cookies! You can either stir them in or sprinkle them on top before baking.
