Their ideas about "low carb" eating are still way too high for me, so ... oh well. They are targeting the main audience of diabetics out there I guess. D.D. Family Getting much harder to control Its a start you better get in line we may not be able to get in lol The article on Cherise and misdiagnosis of LADA was great. I agree with you on the recipes. Once in awhile I do find a good one or can switch some of the ingredients around to make it workable for me. They always have a mouth watering recipe on the cover. I noticed the plug for DiabetesDaily when my issue recently arrived. I found this site (which I love) through a book by Richard Vaughn and so glad to have found you all. I really like most of the articles in Diabetic Living so much that I began subscribing after having checked out back issues from my local library. I try to reduce my carbs as much as possible and I have to agree that the carb allowances they give are too generous. What annoys me more than that are the recipes are geared toward 6, 8 and 12 servings. I'm only one person!!! Some recipes can be halved or frozen but many cannot meaning a waste of money to toss out or the same entrees to be eaten day after day after day. I would rather see recipes that feed two people that can be doubled or tripled as needed. In the Fall 2010 issue of DL, I did enjoy the article on "store brand savings" called "Big Buys." Check out the food and diabetes section on the website for more information and background to healthy eating for diabetes. You will find that some of these recipes include sugar and that the traffic light system indicates red, as the recipe may be high in sugars but this does not mean that they can’t be included as part of a balanced diet. We are trying to increase awareness that having diabetes does not mean you must follow a diet that restricts sugar, as this is not the case. Small amounts of sugar are fine, particularly if they are combined with foods that are high in fibre. Desserts, biscuits and confectionery are not forbidden but because these are also usually high in calories, fat and sugar, people with diabetes should only have these occasionally. Lightened Country Fried Steak (diabetic Living)
1/4 tsp. Montreal or Kansas City steak seasoning If necessary, pound meat with a steak mallet until 1/2 inch thick, between two pieces of plastic. In a shallow dish, combine flour the 1/2 tsp. steak seasoning and the 1/4 tsp. salt. In another shallow dish combine egg product and 2 tbsp. milk. Place crushed cornflakes in a third shallow dish. Dip steaks into flour mixture, turning to coat evenly. Dip into egg mixture, then into the cornflakes, turning to coat evenly. Coat a very large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add steaks to skillet. Cook 10 to 12 minutes for medium rare to medium doneness, turning once halfway through cooking. If steaks brown too quickly, turn heat down to medium. Remove steaks from pan, cover to keep warm. For gravy, in same skillet, heat butter over medium heat until melted. Add onions and garlic; cook 3 to 5 minutes until tender, stirring occasionally. In a small bowl, whisk milk, flour and 1/4 tsp. steak seasoning until smooth. Add milk mixture all at once to skillet and onion mixture. Cook and stir until thickened and bubbly; cook and stir one minute more. Carrot Cake Towers: Diabetic Friendly
You don’t have to be a diabetic to enjoy these, my kids can vouch for that. However, if you need it, the nutritional information is available at the end. I found this recipe in a magazine called Diabetic Living run by Better Homes and Gardens. This whole diabetic thing is still very new to me, but I am determined to stay healthy, lose weight (lost 7.5 pounds so far!), and keep my diabetes in check. I knew that one thing that I would have trouble with giving up was sweets. Turns out I don’t actually have to give up anything, I just need to watch my portions and keep track of my carbs, proteins and fats. This is why the nutritional information, especially the diabetic counts, are so important on recipes. I was immediately drawn to the photo in the magazine and knew I had to try it. I did search out the magazine online and found the recipe here. This can also be made as a layer cake by using two 8 or 9 inch round pans. I was a little skeptical about how it would taste. Carrot cake can be good or really, really bad, and this recipe had flax seed meal. I’ve never used that before and it sounds so darn healthy, which of course is often associated with poor flavor. Nothing could be further from the truth. The cake is delicious and the cream cheese frosting is divine. These would be perfect for a party, however I think if I made these again, I would make them into triangles or squares and avoid the scrap cake all together. Since then, the public has been in an uproar over her full-fat, high-sugar recipes and how they may have contributed to her developing the condition, and it's easy to see why.
