It is also one of those recipes you can easily make with your children because it is so simple and quick to whip up a batch. Mix the peanut butter, egg, sugar, and vanilla until the dough is mixed. Salted Peanut Buttercookies

Salted Peanut Buttercookies

I have never been particularly interested in recipes or, if were being completely tactlessly honest, people defined by what they are not, which is probably why you dont see a lot of recipes with flour/ dairy / gluten /meat/sugar-free, no-bake, one-bowl, hand-whisked or the like in recipe titles here, although we have plenty of all of the above. My favorite foods in this category are accidentally what they are; its a perk, but not the purpose. Id rather talk about what a recipe does have, like flavor, or texture or an appeal that makes it almost painful not to make it in the minutes after you read about it. But I am not immune to the charms of ingredient absences. Many years ago, I assembled some easy after-school snack recipes for a magazine something I couldnt have been less of an expert on then, pre-kids, or, frankly, now (an apple and a cookie, maybe?) and it gave me a chance to audition a three-ingredient peanut butter cookie a friend had told me about that was curiously absent in flour, butter, baking powder or baking soda and even salt. The results were, I mean, okay. It was peanut butter and sugar, it couldnt possibly not be delicious . But they werent exceptional; they merely fit the bill. So, when the Ovenly Bakerys cookbook came out last year and a reader emailed insisting I pick it up (I did) and I saw a peanut butter cookie that was similar, I dismissed it as probably not worth it. And then, as these things happen, while walking past a coffee shop on Sunday, I abruptly decided my husband and I needed a re-up, and while in there even more abruptly decided we had to split the last peanut butter cookie at the shop before someone else got to it. It was spectacular: tall, dome-shaped with a crisp exterior and decadently tender center, absolutely intense with pea Continue reading >>

Sweets in a Diabetic Diet A healthy diabetic diet is all about balance. As long as moderation is taken into account, a small amount of sugar is accounted for in the total amount of carbohydrates in your diet. As a general rule, diabetics should try to cut down on foods and drinks that have large amounts of sugar because they can make blood sugar control and weight control more difficult. First up is our Browned Butter and Chocolate Chip Cookies. Butter moves from nutty and brown to bitter and burned quickly, so be sure to take the pan off the heat once it turns amber-brown. Ketone Test Strips - Instantly know if you're in ketosis. Granular Erythritol - 0-carb sweetener that tastes like sugar! Monk Fruit + Erythritol - As sweet as sugar & 100% guilt-free! Veggie Spiralizer - Make healthy veggie noodles in minutes! Im surprised it took this long to post low carb peanut butter cookies, I guess because theyre gone so quick once theyve baked! Peanut butter cookies hold a special place in my heart because theyre the first dessert recipe I ever made at the young age of 10. And it figures, there are only three ingredients needed for them! Traditionally, they are sugar, peanut butter and an egg. Simple enough for kids and delicious enough to enjoy at any age. To make these low carb and keto-friendly, the only thingneeded istoswap out sugar for erythritol ! The brand of erythritol we use is Swerve or Sukrin . Theyre found in a lot of grocery stores near us and fit our budget when we need to stock up on low carb sweeteners! Swerves erythritol is ground much finer than most erythritols which makes baking a lot simpler because erythritol is a bit more difficult to dissolve in water than regular table sugar. You can also get a confectioners version of erythritol which helps in baking even more- especially for frosting! The original recipe thats been posted countless times all over the internet calls for a cup of sugar for about 12-15 cookies. Based on my experience, I decided to add in half a cup of erythritol. Being keto-adapted, my tolerance for sweets has decreased drastically. And experimenting with keto desserts has taught me to cut the sweetness! Even though erythritol is only about 70% as sweet as sugar, I still used a small amount and the low carb peanut butter cookies still turned out sweet and perfect! I suggest starting off with this small am Continue reading >>
