"I have tried low-fat graham cracker crusts, but they got soggy under fruit pies and actually floated into the filling of the pumpkin pies," she says. I decided to create a diabetized pie crust to help Pat outand the result is every bit as flaky as the original, but without the harmful hydrogenated fat that's found in vegetable shortening. Since vegetable shortening gives dough flakiness, I had to cheat: I added oil and butter instead. Here are a few tips for creating a great dough, sans shortening: Keep it cold. Chill your ingredientsand even the utensilsto prevent the gluten (protein strands in wheat) from developing, which will make the crust tough. Handle it gently. Don't overwork the dough. Doing so will reduce its flakiness. Add liquid sparingly. Once the dough mixture is crumbly, add liquid gently and slowly. The dough should stick together, but it shouldn't be wet or sticky. Let it rest. Stop the crust from shrinking during baking by letting the dough sit before you bake. Metric Ingredients 1 envelope gelatin, unflavored unflavored 3 tablespoons lime juice ½ cup water boiling 9 sugar substitute 1 gram packets * 1 graham cracker pie crust 9 inch * lime zest * limes thin, slices * 1 cup evaporated milk skim 1 teaspoon vanilla extract 1 ½ limes juice only * 2 drops food coloring green * Directions Sprinkle gelatin over lime juice and let it stand for 1 minute. Add boiling water and sweetener to gelatin mixture and stir until gelatin is dissolved. Refrigerate about 45 minutes or until slightly thickened. Combine milk and vanilla and freeze 30 minutes. Remove from freezer and whip at high speed until stiff. Stir lime juice and food coloring into whipped milk. (Save remaining ½ lime for garnish.) Slowly blend gelatin mixture into whipped milk. Add the cream cheese, melted butter, sugar, egg and egg yolks, vanilla, cinnamon, and salt and blend with a hand mixer until well incorporated. Put the softened butter and graham cracker crumbs in a bowl and mix them together with a fork. Press the crumb mixture into the bottoms of ten foil ramekins. Put the tins on the refrigerator and chill them for 10 minutes. Divide the pumpkin filling among the tins. Set the tins in a roasting pan and pour warm water into the roasting pan until it comes halfway up the sides of the tins. Bake until the miniature pies are set (a toothpick inserted into the center of a pie will come out clean), 20 to 25 minutes. Remove the roasting pan from the oven.
