Melt-in-your-mouth Pumpkin Cookies
Using canned pumpkin and your pantry baking staples you'll create one of the most delicious pumpkin recipes you've ever tasted. You can toss out those other pumpkin cookie recipes, this is the only one you'll ever need. Preheat oven to 350 degrees F. In a large bowl, beat 2 cups butter with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Beat until combined, scraping bowl occasionally. Add eggs and 2 teaspoons vanilla; beat until combined. Beat in pumpkin. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Drop dough by heaping teaspoons 2 inches apart on an ungreased cookie sheet . Bake in the preheated oven for 10 to 12 minutes or until tops are set. Transfer cookies to a wire rack; let cool. In a small saucepan, heat 1/2 cup butter and brown sugar until melted and smooth. Transfer to a medium bowl. Stir in milk and 1 teaspoon vanilla. Beat in powdered sugar until smooth. Spread frosting on cookies. If desired, sprinkle with additional cinnamon. Makes about 60 cookies. Drop 1/4-cup portions of dough 2 inches apart onto an ungreased cookie sheet. Bake 13 to 15 minutes or until tops are set and edges are golden. Remove; cool on a wire rack. Top cooled cookies with Brown Sugar Icing and pumpkin pie spice. Makes 26 cookies. Nutrition Facts (Melt-in-Your-Mouth Pumpkin Cookies) I make these cookies every fall. So, you've just been diagnosed with type 2 diabetes. Obviously, your first question is, "Holy Crap, is this gonna kill me?" The answer is, well, maybe ....or maybe not ….probably not …but then again …a part of the answer depends on what you eat. If you eat the wrong things it can get worse ….or maybe not. Unfortunately, and something you're gonna find very frustrating, is the answer to most questions about T2 diabetes is, “maybe – maybe not - depends on the individual, etc”… like trying to get a straight answer from a polititian ...that’s type 2 diabetes for you. If you're careful, and only eat the right things, you'll probably starve to death anyway, so don't worry about it. My mother had T2 diabetes real bad. She died - and she was only 89. I have T2 diabetes, and I get really hungry for foods I'm not supposed to eat. I've found that booze takes the edge off a little. Try supplementing your diet with 5 or 6 martinis before meals ...works for me. Never smoke pot …the munchies are suicide. Trying to figure out what you can eat is a bitch. One way is to pretend you're a rabbit, and go with your instincts. If you're not sure what a rabbit eats, follow one around for a few days, and when they start to eat something, take it away from them and eat it. Oh! …except carrots. You can't eat carrots ….well, maybe you can - maybe not. Try a few bites to see if you swell up and die. But, just to be on the safe side, it's best to stay with bushes and grass …maybe some twigs. I have found that just cuz it's sugar free doesnt mean the carbs are low. try recipes from scratch using almond flour, very low carb, and quite tasty to boot ! If you don't mind online shopping www.nuts.com has almond flour and so does Amazon.com. Give one of those a try. In addition, if you think all those "little carbs" don't matter, you can underestimate your insulin needs significantly, if the protocol for that time of day is 1 unit for every 4 carbs. At least that's the way it's been for me. I have a target number of carbs that I should eat every day. It's between 150-180. That helps me decide what to eat for each meal. If I know I'm going to eat a lot at one meal, then I try to eat foods with much lower carbs at the other meals. We also try to adjust most the recipes to be as "friendly" as possible! Even when we control for the fat and carbs though, my numbers can be crazy. Many questions on substitutions have been answered in the comments, but if you dont see an answer youre looking for leave a comment and Ill respond. These cookies will satisfy any chocolate chip cookie craving you have! We love keeping them in the freezer and eating them cold straight out of the freezer. Great to have around when youre craving something sweet! I have attempted several almond flour chocolate chip cookies and finally found a winner! These cookies are slightly crispy on the outside and moist and soft on the inside. My friends and family loved these! With this recipe you can easily switch up the chocolate chips and nuts to your preferences. Chocolate chip cookies really are one of lifes simple pleasures. Few things are more comforting than a warm, freshly-baked cookie with a glass of cold milk (almond milk in my case). As with many other cookie recipes, I usually make a batch of dough, then bake half and freeze the other half. To freeze the dough, form it into mounds and place them on a cookie sheet. Put the cookie sheet in the freezer. Once the dough is frozen you can transfer the mounds to a plastic bag. When you want a cookie, just bake the frozen dough by adding 2-4 minutes onto the cook time. These are perfect to have on hand for those nights when you just need a little something sweet! Yes! The other night, we went to Applebee’s for dinner and met Sam, the manager originally from Thailand, who revealed that his doctor recently told him to change his diet because he’s prediabetic. This was after we shared about this blog and handed him a card. The conversation had originally been about asking him to send the word up the command chain that customers are asking for low carb or sugar free desserts. Then we explained that we’re trying to ask as often as possible so that upper management might finally realize there’s a demand for that type of offering and do something to make that happen. He said he would pass that along to his superiors, but then he asked me several questions about what it means to be prediabetic, and how he needed to change his diet. He shared that he eats a lot of food traditional to his culture, because his wife is also originally from Thailand. They always have rice with their meals, so he eats rice several times a day. I told him that’s a big no-no, unfortunately, because rice is very high in carbs. His face fell. So I amended that statement: “Well, at least cut down on how much rice you eat at every meal. Take half the rice you would normally take, and start there.” He looked reflective a moment and then nodded. I also strongly recommended that he go to Walmart and buy himself a cheap blood glucose test kit. Walmart’s brands are far less expensive than others and are just as accurate.
