Paula Deen's Top Recipes, Made Diabetes-friendly

Paula Deen's Top Recipes, Made Diabetes-friendly

1 / 9 Back in January, celebrity chef Paula Deen went public with her type 2 diabetes diagnosis around the same time an endorsement deal was announced between Deen and the company that makes the diabetes drug Victoza. Since then, the public has been in an uproar over her full-fat, high-sugar recipes and how they may have contributed to her developing the condition, and it's easy to see why. "If you were to regularly eat the foods that Paula Deen traditionally cooks on her show, it certainly would increase the risk for developing type 2 diabetes," says Megan Fendt, nutritionist and certified diabetes educator at the Friedman Diabetes Institute at Beth Israel Medical Center in New York City. "These types of foods are high in calories, and any calories over and above what our bodies need are stored as fat. And there is a strong link between carrying excess weight and developing diabetes." When she made her announcement on the Today Show, Deen told co-host Al Roker, "I share with you all these yummy, fattening recipes, but I tell people, 'in moderation.' However, it's hard to figure out what constitutes a moderate portion of some of her more famous creations — like battered, deep-fried butter balls and a bacon-and-egg burger served on a glazed donut. The good news is you can enjoy Southern-style cooking with a fraction of the fat, sugar, and calories found in Deen's cooking. Here's our healthier, diabetes-friendly take on Paula's classic cuisine. Im Writing A Diabetic Cookbook Will You Share Your Story?

An astounding factby 2050 if we stay on the same trajectory, 1 in 3 Americans will have diabetes or pre-diabetes. Chances are theres someone you love that lives with this challenging disease. Type 1 diabetes, which affects 5 10 percent of people with diabetes, is not preventable and often begins in childhood. Type 2 diabetes, which is far more prevalent, can be preventable and often treatable at onset by maintaining a healthy weight, exercising and eating well. My grandfather Isadore Shlensky had diabetes. I have early memories of watching him give himself insulin shots in his stomach (maybe thats where my fear of needles developed!). As a child, I couldnt imagine having to give myself shots every dayfrankly, even as a grown woman I cringe at the thought. Last year, Grandpa Ises daughter, my beloved aunt Gerry, was diagnosed with diabetes, which so far she has been able to manage with medicine and some lifestyle changes. Either the propensity for diabetes runs in our family, or we are just a typical American family, Im not quite sure which. But I want to do what I can to help people avoid or live better with this disease. While Im no expert in diabetes, I have become somewhat of an expert in healthy cooking and eating over the course of my 16 years developing and sharing healthy recipes, including writing 3 cookbooks . Thats why Ive teamed up with the American Diabetes Association to write a Six OClock Scramble meal-planning diabetic cookbook for people with diabetes and pre-diabetes. I can imagine that when people are first diagnosed, they feel panicked about the lifestyle changes they have to make and are desperate for guidance when it comes to meal planning and cooking, and I hope I can serve them (pun intended). Ive just begun to write the diabetic cookbook, which Continue reading >>
