Can you make Christmas candies with Splenda? I am to take candies to a club meeting tomorrow night, plus the recipe. This might be an opportunity to help educate the women who give me a hard time about being a diabetic. PR Well I have tried and tried to get to Splenda candy recipes, found some cookies, nothing specific, got the idea that you can use your normal ingredients, just substituting the Splenda for the sugar. However, in suggesting Splenda instead of sugar, the ratio was 1 packet of Splenda = 2 teaspoons of sugar, so guess the ratio for Splenda in the bulk would be 1/2 c Splenda to 1 cup of sugar. The last time I tried to get into Splenda.com/candy recipes, or such , I got into Babes-Girls-etc-sweet etc, NOT what I was looking for, so quit before my PC became contaminated! hahaPR P.S. My very favorite cookie, for as long as I can remember, has been the chocolate missouri cookie. These soft chewy gooey no-bake treats are packed with three of my favorite cookie flavors chocolate, peanut butter and oatmeal. They are so simple to prepare, yet taste like pure heaven. Although this is a recipe that my grandma used to make, and passed down to my mom, I dont actually associate these cookies with either my grandma or my mom. When I think of warm gooey chewy chocolate missouri cookies, I think of my Aunt Reen. Because Aunt Reen is the one who always baked these for all of us kids when our extended family got together. We kids would stand around the stove watching Aunt Reen make these, and then burn our mouths because we couldnt stand waiting for the cookies to cool, so we would pick them up and eat them while still hot. Mom recently explained to me that it was Grandma who first made them for us, and then my mom. But, since Aunt Reen loved baking so much and didnt do much cooking Mom turned over the cookie-making duties to Aunt Reen for all of over family functions. I was surprised to have just found this bit of family culinary history out after 41 years! Mom doesnt know who passed the recipe down to Grandma if it was her mother, an older sister, a friend, or if she simply clipped it from a magazine. And since Grandma passed away in 1992, I will never know. For me, its just never Christmas without my favorite childhood cookies. So, although I really dont do much baking at all even during the holidays I have always made these cookies at Christmas time. Line a small baking pan with foil and spray with cooking spray. Melt butter over low medium until it starts to turn golden. Add nuts and cook for about five minutes until they are slightly toasted. Add 4 tbsp of the cream and the sweetener. Cook until thickened and golden. This takes about 10 minutes. If it doesn't seem to be thickening you can turn up the heat to medium or medium high but stir constantly. It can burn quickly. Remove immediately from the heat and add the salt and reserved cream. Stir until smooth. Pour onto the foil lined tray and refrigerate until firm to the touch (about half an hour). Melt the chocolate. I do this in a glass bowl in the microwave stirring every thirty seconds. Add sweetener if needed. Pour half of the chocolate on top of the toffee. Put in the freezer until the chocolate is solid. Flip over the toffee bark and peel off the foil. Put the foil back on the tray and put the toffee on chocolate side down. Pour the rest of the chocolate on top. Refrigerate or freeze until firm. One of the most common triggers is when the candy has undergone an abrupt temperature shift, either becoming too cold or too hot in a very short period of time. Try not to "shock" your candy by drastically turning the heat up or down during cooking. Additionally, it is especially important to watch the candy in the beginning of the cooking process, while the butter and sugar are melting together, because separation can often result if these two elements melt unevenly. If you have very effective stovetop burners I recommend turning them to medium-low to allow the butter and sugar to melt gently in the beginning stages. Toffee and caramel can also separate if the recipe calls for constant stirring and the candy isnt stirred often enough. Additionally, separation is more likely to occur when using thinner (cheaper) saucepans, as they dont conduct heat efficiently and lead to hot spots that can cause the butter to separate. Finally, humidity can cause the butter to separate, so if your kitchen is very warm and humid, its not a good time to be making candy. So, can your separated candy be saved? If your candy separates during the cooking process, there is a chance you can save it. Sometimes separated toffee or caramel can be saved by removing the saucepan from the heat and stirring constantly and smoothly until it comes back together, then gradually returning it to the heat, stirring constantly.
