The sauce is amazing and is perfect served over rice. Dont let the title of this recipe fool you, easy doesnt mean lacking in flavor! Youve all heard the exotic terms before. Take curries, which basically sums up many a dish from India using combinations of spices including fresh or dried hot chillies in a sauce typically served with rice. Masala, which is a number of spice mixtures ground into a paste or powder for use in Indian cooking. But the word Korma, not so much. Think of it as how the Western cuisines use the word stew. Sure there are as many korma dishes as curries. So thinking in terms of stews, that dish of meat and vegetables cooked slowly in a liquid or sauce in a closed pot, there are chilis, tagines, ratatouilles, all slow simmered in a liquid or sauce. Indian-style korma curries are loved the world over. This version is quite mild, so add more korma paste if you like a bit more heat, or experiment by using another Indian curry paste. Serve with a warm Indian bread, such as wholemeal naan bread or chapattis. 600 g boneless, skinless chicken breasts, thickly sliced 2 tablespoons chopped fresh coriander leaves Heat the oil in a heavy-based saucepan or flameproof casserole dish and saut the onion and ginger over medium heat for 5 minutes, or until softened. Stir in the korma paste or powder and cook over low heat for 1 minute, taking care that it does not burn. Add the chicken, stirring to coat in the spicy onions. Stir in the stock and coconut milk, season with salt and freshly ground black pepper and bring to a boil. Reduce the heat and simmer for 20 minutes. Stir in the almond meal to thicken the sauce. Scatter the coriander on top and serve. Preheat the oven to 180C. Follow step 1 above, sauting the ingredients in a flameproof casserole dish. Continue with step 2. After seasoning the mixture, bring to a boil, then cover the dish and transfer to the oven. Bake for 45 minutes, or until the chicken is tender. Stir in the almond meal, sprinkle with the coriander and serve. If you have a slow cooker you can saut in, or you dont mind using another pot, follow step 1 above. (Alternatively, omit the oil and the sauting step.) Transfer all the ingredients to the slow cooker, except the almond meal and coriander, reducing the stock to 1/3 cup (80 ml) and the coconut milk to 200 ml. 1. Cut the chicken into approximately 3cm pieces. Peel, halve and finely slice your onions. Halve, deseed and finely slice the chilli, if you're using it. Peel and finely chop the ginger. Pick the coriander leaves and finely chop the stalks. Drain the chickpeas. 2. Put a large casserole-type pan on a high heat and add a couple of lugs of oil. Put the chicken thighs into the pan, if using, stir around and brown lightly on all sides for 5 minutes (if using breasts, don't put them in yet). Push the chicken to one side of the pan. Stir in the onions, chilli, ginger and coriander stalks with the butter. Keep stirring it enough, so that it doesn't catch and burn, but turns evenly golden. Cook for around 10 minutes. 3. Add the korma curry paste, coconut milk, half your flaked almonds, the drained chickpeas, desiccated coconut and sliced chicken breasts (if using). Half fill the empty chickpea tin with water, pour it into the pan, and stir again. Bring to the boil, then turn the heat down and simmer for 30 minutes with the lid on. Check the curry regularly to make sure its not drying out, and add extra water if necessary. 4. When the chicken is tender and cooked, taste and season with salt and pepper - but please season carefully. I followed the recipe to the tee, with the only modification being that I tempered the yogurt before adding it to the crockpot to avoid to curdling problem mentioned in other reviews. As a forewarning, though, if you are expecting restaurant style korma then you will likely be disappointed. First of all, I've never seen restaurant korma with potatoes and tomato chunks. (Regardless, it does have a korma-like flavor.) Also, given that this recipe is a "light" version of korma, it will lack the creaminess (along with the high fat content and calories) of a restaurant dish. As long as you're aren't looking for a carbon copy of restaurant korma, and are satisfied with a korma-like flavor and overall delicious but healthy Indian style dish...this recipe is spot on! Simple recipe that is easy to make for a crowd. Served with coconut rice and a raita, it was a major hit at a recent potluck. For that particular party I cooked it on a stovetop for about an hour rather than slowcooking it. I do think it would be better cooked lower and slower but was in a rush. I I The "sitting for 15 minutes" step before stirring in the yogurt is to avoid the yogurt curdling. You can avoid this by tempering, stirring the yogurt into a portion of the dish in a separate bowl, then stir that into the whole. If you're using non-fat yogurt, this step is pretty much required. So today its Chicken Korma the book says 340 calories per person, the online calculator is between 500 and 550 depending on the weight of chicken the book says small chicken breast. I had a similar discrepancy with a mackerel frittata I made. I tend to believe the online calorie counter the korma recipe for example has 100 ml of coconut milk, 100ml full fat Greek yoghurt, a tablespoon of oil per person as well as other ingredients, including the chicken. Its hard to believe it could ever come in at 340 calories. But the book was written by Michael Mosleys wife and has him doing an intro so I would have hoped it was more accurate. Anyone else had a similar experience? The korma recipe is either 200mls coconut milk OR 200mls of yoghurt, for two people. So that should help a bit! Ive noticed the same thing. Someone mentioned in a post that the carb free ploughmans totalled 250 calories (and that particular version included ham), but an apple, matchbox piece of cheddar cheese and 50g mixed nuts I had for lunch today totalled 493 calories on my Fitbit food tracker. Concerned Im either eating too many calories or too few! Would be useful to know which calorie counter should be used. Hi,,, Ive noticed this too.
