Slow Cooker Chicken Noodle Soup, Diabetic

12 lb fresh spinach , well washed and large stems removed 2 stalks celery & leaves , and diced small Rinse and pat dry chicken. Place in a 5-quart or larger crockery slow cooker. Place the peeled and quarterd onion, peeled and quartered carrot, and parsley around chicken pieces. Sprinkle with thyme, marjoram, and pepper. Add chicken broth, cover, and cook on low for 7 to 8 hours or on high for 2 1/2 to 3 hours. When done cooking, remove the chicken and discard the onion, carrot, and parsley. Skim off and discard all surface fat from the broth. Cool chicken from broth for about 10 minutes, until cool enough to handle and remove and discard the chicken skin and bones. Shred chicken. Add shredded chicken back to the slow cooker and bring to a simmer. Lightly saute the diced onion, diced carrots, diced celery, mushroom, in a little broth or water until softened and place in the crock along with the spinach. Simmer for 10 minutes. Bring to boil on high. Add beef. Return to a boil, skimming any foam from the top. Cook, covered, on medium-low heat for 1 hour or until beef is just tender. Strain over a large heatproof bowl. Reserve beef and liquid together, and onion and garlic together. Discard remaining solids. Mash onion and garlic in a small bowl until smooth. Heat oil in a large saucepan on medium- high. Add celery. Cook for 2 minutes or until starting to soften. Add reserved liquid and beef, onion mixture, sweet potato and barley. Bring to boil. Reduce heat to medium- low. Cook, covered, stirring occasionally, for 30 to 40 minutes or until barley is tender. Season with salt and pepper. Stir in green beans. Cook for 5 minutes or until beans are just tender. My kids have had maybe one bad bout of flu, but otherwise theyve seemed relatively healthy. Sniffles and sore throats have come and gone, but they havent missed a lot of school, and they havent appeared to suffer too much. However, sometimes I think that I can SEE James fighting off some of these cold bugs that come around. His blood sugar will be unruly and unexplainable. It seems to have no cause and only one effect to drive me crazy! Last week I had an incident in which, for whatever reason, the continuous glucose monitoring (CGM) system kept going off during the night. I suspect James was fighting one of those invisible cold bugs. Perhaps he was even winning! Regardless, I just couldnt get things right, and I have to admit that I woke up the next morning feeling both really grumpy and very frustrated! It was tough to get into my usual morning routine, and I found myself short tempered and impatient with everyone. I needed a turnaround. So I decided to make soup. Does that sound weird? We eat soup fairly often, so it isnt that soup itself is a weird choice. But for me, making it at around 9 a.m. is a little more unusual. Turns out, it was just what I needed! I embarked on making some of my potato cheese soup ( heres the recipe ). It came out so great, and making it was such a satisfying process that Im now dubbing it my diabetes soup. Whole-grain food items make healthy diabetes choices because whole grains are rich in soluble fiber, a nutrient that may help stabilize your blood glucose levels, lower your blood pressure and reduce your low-density lipoprotein cholesterol. In addition, whole grains contain essential fatty acids, vitamin E and most of the B vitamins. Look for ingredient lists topped by 100 percent whole-wheat flour when shopping for noodles. Avoid noodles made from processed and refined grains, like those containing white or enriched wheat flour. Lean Chicken and Broth The healthiest protein sources are low in calories and saturated fat. Last week, when the thermometer on our deck registered 90°F, I craved soup. It didn’t make any sense, but I wanted a warm tomato-based soup loaded with vegetables. The fact that I needed to use up some farmers’ market finds that were just a tiny bit past their prime was only a bonus. The recipe below is a specific instance of a more general soup-making technique: Sauté aromatic vegetables like onions, garlic and celery in olive oil. Add seasonings like salt and pepper. Add crushed tomatoes and vegetable or chicken stock. Add firm vegetables such as carrots, cauliflower, broccoli and/or root vegetables. Add softer vegetables such as yellow squash, zucchini, bell peppers, string beans and leafy greens. Garnish with fresh herbs. I’m trying to stay away from starchy vegetables and beans at the moment, but feel free to throw in peas, corn or drained and rinsed canned beans when you add the softer vegetables. I like my vegetables to be on the crunchy side; if you prefer yours to be softer, cook each stage for 5 or 10 minutes more than indicated below. You really can’t screw up this recipe. It is almost officially fall. This year went by fast! I didn’t want to quite believe it, but the temperatures have been dropping and I have had to put my summer clothes away in favor of warmer, fall ones.
