This was in my mail this morning, it sounds good, but SO much effort, I think I'll skip it. Let me know if you try it and if it is worth it or not I'm not even sure where to buy yucca root. I don't think I have ever seen Yucca Root in my stores. They do sell the jimica but it is $3.99 a pound which makes some expensive fries. I like how he says sweet potatoes are a safe starch. I used to be able to do sweet potatoes fries but no longer. 115 pounds, Breast Cancer dx'd 6/16, 6 months of chemo and 6 weeks of radiation 2000 metformin ER, 100 mg Januvia,Glimperide, Prolia, Gabapentin, Meloxicam, Probiotic with a Prebiotic, , Lisinopril, B-12, B-6, Tumeric, Magnesium, Calcium, Vit D, and Occuvite mostly vegan diet, low fat and around 125 carbs a day, walk 5-6 miles every other day and 1 hour of yoga and light weights. I was determined to incorporate it into my own cooking as soon as I got home, but then something happened: I couldnt find yuca root anywhere. I had all but given up my search foryuca, when I finally spied a pile of it in my grocery store, right next to the turnips. Being as it is root vegetable season, yuca is now easier to find. And perfect timing, because the super carby and cozy veggie is perfect for incorporating into your fall and winter stews and side dishes. Yuca root is verydense and starchy and is used just like a potato in many delicious dishes worldwide. It has a mild flavor, which makes it versatile for incorporating into numerous types of recipes.
