Make the barbecue sauce: Combine all the ingredients for the sauce in a small saucepan. Bring to a boil, lower the heat, and simmer for 30 minutes. (You can also wait and do this step while the chicken is grilling, if it's convenient.) Prepare the grill: Coat the rack with cooking spray, or use tongs to dip a large piece of paper towel into vegetable oil and rub it on the grill rack. (Discard the towel.) For a gas grill, set one burner to medium, leaving the remaining burners off. For a charcoal grill, arrange the coals so that one side of the grill is hotter than the other, then light the coals. Combine all the rub ingredients. Coat the chicken with the rub, and let it stand at room temperature for 15 minutes while the rub permeates the meat. Place the chicken on the grill rack above the medium burner on a gas grill or on the cool side of a charcoal grill. Cover the grill. Maintain the grill temperature at about no more than 300F. Baste each piece of chicken with some of the apple juice. Grill for about 45 minutes on one side, basting occasionally with apple juice. Turn the chicken thighs and continue to cook for about another 45 minutes, basting with the apple juice. Brush one side of the chicken with barbecue sauce, and continue to cook, covered, for 5 minutes. Turn over each piece, and brush with more sauce. Cook, covered, for another 5 minutes. Ive been hinting about a health issue my husband was faced with in my last couple of posts. Its nothing major well, I guess it is, but my reasoning is that it could have been a LOT worse. At first wewerent sure exactly what was going on. Sitting in bed one night he started losing feeling down his left side it only lasted for 5 minutes, and it was terrifying. We were worried it was a mini-stroke, we were worried it was a tumor. Your mind very quickly goes to the terrible when something like that happens. Hes only 34. After a shit tonof tests (like, ALL the tests, because thats the only way I could sleep at night), every major concern came back clean. The numbness was chalked up to an abnormal migrane. Bo had one earlier in that day, and the pain from it had gone, but apparently in rare cases, temporary left side numbnesscan occur afterwards. Insane, and also fucking terrifying. I hope that NEVER happens to him again. Then we got a phone call that there was something off with his blood work, and back to the doctor he went, where he was slapped with Type 2 Diabetes. It really is a slap too, the kind of thing that hits you by surprise, and shocks you into doing what you need to do to keep going. Having three kids at home who rely on you helps with the motivation too. Its been a few weeks now. Bo accepted and dealt with the diagnoses better than I thought anyone ever could. He cut out the worst offenders cold turkey gone were the way too many cans of coke he was drinking every day, along with the oversized combo meals. I got called up to a patients room yesterday because the patients daughter felt her diabetic mother was being served an unhealthy lunch. Her lunch included a chicken Caesar salad with a twist (i.e. pasta) and a vanilla pudding. The daughter started by telling me how much insulin her mother takes and that shes a very brittle diabetic (I hate this term, no idea whyprobably because theres no real medical definition). She then went on to tell me that she feels her mother was served FAR too much carbohydrate. While I ran a quick calculation of the patients needs and the carbohydrate content of her lunch, I felt her lunch was perfectly balanced and the appropriate amount of carbohydrate. But, my response was not what the daughter wanted to hear. Apparently, she felt vanilla ice cream (23 grams of carbohydrate) was a better option for her brittle diabetic mother than the vanilla pudding (15 grams of carbohydrate), in terms of carbohydrate content. The moral of the story ispeople care a lot about carbohydrate (even if theyre misunderstood). And sugar. Rightfully so. Anyone can make it and anyone can eat it. I have to confess to being very conscious about my health and the food that I put into my body yet at the same time I'm also passionate about barbecue and outdoor cooking. My argument is that if you are using my recipes for your own meals then that's got to be a step in the right direction because cooking from fresh ingredients is always better than starting with a processed ingredient. That said, I know that sugar is not good for me and I also know that a number of my barbecue sauce recipes contain either a lot of added sugar or start with a processed ingredient such as ketchup. So this recipe is based primarily on fresh ingredients but its still has a sweetness thanks to the addition of some sugar free cola. Here are three secrets for your life with diabetes around food: Despite what everyone is saying you “can’t” and “shouldn’t” eat, you are the one who puts the food in your mouth…which means you actually can eat anything, in a sense. It is your choice, and while we all would be better if we always chose the healthiest foods, try reminding yourself of this statement: “I can choose to eat whatever I want.” Thinking this way around your choices versus feeling like you aren’t allowed to eat practically anything can be a very helpful tool for feeling more empowered around food. I am big on brisket and spare ribs and I also like whole chickens South Louisiana, on the Mississippi River There ya go, chickens are no problem, use some fruit, herbs, veggies if you need to build more complex flavors. BUT you can sprinkle some Mrs Dash on the bird and smoke it just like that. Chicken is happy just in the smoke. but you could sprinkle. parsley, sage, rosemary, thyme, or stuff it with onions or go with fruit like oranges and apples. Just chicken is a perfectly wonderful meal. They tried taking me off salt once also. Its like someone rips out your taste buds.But you can sacrifice salt by replacing it with other flavors. Its really frustrating cause nothing seems right, and it takes awhile to ween yourself and not want it. It just takes time. Most recipes that call for sugar or brown sugar seem to work well with sugar sustitutes. The bark may not be quite the same but still very good. I've lost over 100 pounds since late September on a local hospital diet, eating my smoked meats a couple times a week. I've used sugar substitutes in all the rubs I've found on this site. Salt is also a concern for me. If I use salt in the rub recipes I find on this forum I usually cut the salt in half to start then adjust up or down from there. Also, lemon zest and lemon pepper seem to be a pretty good supplement to the reduced salt. Everyone has different likes and dislikes but these techniques seem to have worked for me.
