Ive read a few snide comments here and there when people put up recipes that require stock. Like 1 c. beef stock. I use canned since I am not Martha Stewart and dont have fresh grass-fed beef stock in my freezer or Im not fancy enough to make my own stock. And it makes me INSANE. I think people have this notion that making your own stock is some elite culinary skill. Reality? You boil bones and leftover crappy parts of vegetables. The end. Its SO easy and for the hell of it, Im going to do a comparison for you real quick. Swanson Organic Beef Broth in my local Target is $4.29 for 32 ounces. They also have a Pacific Foods Organic Beef Broth for a bit cheaper and while it is very delicious, it does have added ingredients in it. From the package: Organic beef stock (water, organic beef), Organic beef flavor base (organic roasted beef including beef juices, organic cane juice, organic beef flavor, organic onion powder, sea salt, organic canola oil, caramel color, organic garlic powder, organic black pepper, organic paprika, flavor), Sea salt, Autolyzed yeast extract, Organic garlic powder. Though none of these ingredients arent technically bad, theyre not necessary when building your own soup or stew, which is what you would be using stock for most of the time. Also, for people with extreme diet sensitivities, caramel color and yeast can cause issues. Overall, Id like my base to be as base as possible. The Swanson is made with cattle-raised cows with no added hormones or antibiotics and has no fillers or MSG in the broth. So I chose this one when I need to have beef broth and dont have any on hand, which happens very rarely. I haven't tried it in months. But it is one of my favorite foods so I keep trying. I know what is in it because made it myself from roasted beef neck bones, salt, and water: beautifully gelatinized and absolutely delicious. So why the heck did 1/2 cup of BB just jump me from 93 to 132? I can eat 6 oz of steak and 15 g/carb in veg and salad and 'leap' from 93 to 113. Yet here I am, shaking from fast BG rise (132 at 45 min PP and sweating hot) and super fast fall (98 at 65 min PP and shivering cold). Okay. Next time I try 1/8 cup. It's not fair, she pouted. (Isn't she cute when she pouts?) That is a very intriguing situation & makes me wonder what contributes to the rise in BG. Marty might have been able to come up with a plausible answer to that one, but he isn't around here anymore. Bones consists of minerals like calcium & phosphorus but also contain a lot of (IGFs) insulin like growth factors. Then there is also protein to think about. I would experiment with lamb & chicken bones to see what is the outcome if any. You also mention reactive hypoglycemia, which might indicate that the broth triggers some signalling malfunction. To be very honest, all of this is just guess work, and needs well planned experimentation, to get to the bottom of it. Well, I think step one of the experimentation is get the tooth mess resolved. When it is actively infected it does appear to cause a lot of nasty things to happen in my body. So, the beautiful bone broth is in the freezer awaiting release at some hopefully not too distant time. Gaps For T2 Diabetes: Beef Broth
The primary nutrition in bone broths or stocks are due to: cartilage, which contains collagen and breaks down to gelatin (and thus the amino acids glycine and proline) minerals, especially calcium, phosphorous and magnesium marrow - with healthy fat containing vitamins A, D3, K2 and the fatty acid CLA ) Grass-fed bones are certainly better than CAFO bones, but I think this difference is much lesser than with meat. In general, I am quite happy buying non-organic bones. If the animal had bones, it has minerals. If it could stand up (a requirement in order to slaughter for food), it has collagen in it's joints. The only serious downside to CAFO bones is that the marrow will have significantly less vitamins A, D3, K2 and the fatty acid CLA. However, since I cook little bone-containing beef cuts and have to buy bones, I usually buy CAFO bones, figuring I get a lot of those nutrients from other foods in my diet. These bones have the most marrow; they are shank bones. Marrow can be eaten prior to using the bones for broth as a nutritious and gourmet dish, or allowed to disintegrate in the broth to add more nutrition there. Marrow contains significant vitamin A (though much less than liver), more vitamin D3 than any other organ (about the same as fat), 10-20 times as much vitamin K2 as other organ meats and a high level of CLA (see references ). So an advantage of using marrow bones is that if you are squeamish about organ meats, you can dissolve the marrow into the broth and hide it from yourself! These are preferred for providing a lot of collagen, and thus gelatin in the final product. In addition, they contain a lot of marrow also. As many of my readers know, I am a huge fan of bone broth. I have been drinking it almost everyday since I began my Zero Carb journey 9 months ago. I found it extremely helpful during the adaptation phase while my body was getting used to an all-meat diet.However, I recently made some changes in my Zero Carb diet. After only one day without bone broth, my fasting blood glucose decreased from 85-95 mg/dL to 65-75 mg/dL, and my fasting blood ketones increased from 0.9-2.4 mmol/L to 4.8-6.5 mmol/L. I must admit that this was a very unexpected and shocking discovery. It was also very disappointing because I truly do LOVE bone broth. However, upon further investigation, it was not so surprising.
