Cheesy Chicken and Rice on page 96 calls for only 3 ounces of Velveeta to serve 4 people, so that isnt a huge amount of fake food in each serving. Limiting the ingredients to just 4 per recipe keeps Hughes from creating a cheese sauce to melt into the casserole, but to suggest such processed food in a cookbook designed for folks who are struggling with health issues isnt wise. Along those lines, Iceberg lettuce is the main ingredient in Thousand Isle Wedges on page 65. Theres not much nutritional value in iceberg lettuce. Although spinach or romaine dont give the same traditional look as a wedge of iceberg, they would be wiser choices for families adapting to the nutritional needs of a diabetic. I needed a quick dinner idea one day and used the Zesty Beef Patties with Grilled Onions on page 125. It called for mixing ground beef with some Dijon mustard and a few teaspoons of ranch dressing packet. Because my burgers were pre-formed, I spread the mustard and sprinkled the mix on the outside before grilling. It added a very nice taste to an otherwise ordinary burger. Were big fans of caramelized onions on burgers, so that was a quick, easy, delicious dinner when I was running behind the curve. The title of the recipe is misleading, however. The onions are sauted not grilled. These pretty Brussels Sprouts took three times longer to cook than called for in the recipe. Photo Hannah George. Hadnt thought to add the almonds and might try that thanks. Warning for this recipe. The measurements for the ingredients are wrong. I soaked the kilo of dried fruit in 500 mls of the light tea as directed. I was a bit puzzled when the liquid didnt cover the fruit. I then mixed in the single cup of flour but it didnt do a thing for the mixture. I poured the mixture into a tin and it just looked like soaked dried fruit. Definitely not cake mix. I checked a few similar recipes and discovered I should have used ONE LITRE of light tea and TWO CUPS of self raising flour. Although the cake had been cooking for half an hour, I was able to take it out, mix in the extra ingredients, and now it looks like a cake. It was nearly an expensive mistake. Thats a thoughtful recipe, I like the peach tea DD drinks it will be making this cake, thank you. Thankfully I dont know any Diabetics but will keep a mental note of this recipe in here If I end up needing one Will be trying this as well as sharing with a friend who is diabetic.
